Recipe(tried): Cheerio bars/Peanutbutter bars
Misc.I know what you mean about finding a good recipe in a cafeteria. The collegeI attended -- Southern Oregon State College -- had an awesome chicken chili and I can't find the recipe for it anywhere!
Have found asking the cafeteria manager for a recipe to be successful. Trouble is, when's the last time you cooked a batch of cookies for 250 people? Ha!
I do, however, have a great recipe for peanut butter bars. Don't know why you couldn't add Cheerios, M&Ms or whatever you wanted. Credit this one to the Tigard (Oregon) Public Schools:

PEANUT BUTTER BARS
Cream together:
3/4 cup butter
1 1/2 cups peanut butter
1 1/2 cups granulated sugar
1 1/2 cups brown sugar (I always use the light brown kind)
Add and mix in:
5 eggs
1 Tablespoon vanilla
Sift together and add:
1 1/2 cups all-purpose flour
3/4 teaspoon salt
1 Tablespoon baking powder
Heat oven to 350 degrees. Grease and flour two 9x13 baking pans.
Bake for 30 minutes or until done.

Peanut Butter Bars
Half-batch (makes one 9x13 pan of peanutbutter bars)
Cream together:
6 tablespoons cup butter
3/4 cups peanut butter
3/4 cups granulated sugar
3/4 cups brown sugar (I always use the light brown kind)
Add and mix in:
2 1/2 eggs
1 1/2 teaspoons vanilla
Sift together and add:
3/4 cups all-purpose flour
1/8 + 1/4 teaspoon salt
1 1/2 teaspoons baking powder
Heat oven to 350 degrees. Grease and flour one 9x13 baking pans.
Bake for 30 minutes or until done.

Note: I always make a half-batch and use nonstick cooking spray instead of greasing and flouring. Have also tried:
1. replacing the butter with nonfat plain yogurt (using one cup fat free yogurt for a full batch);
2. using almond butter instead of peanut butter;
3. Substituting whole-wheat flour instead of white flour (and adding two extra tablespoon of flour to compensate for the yogurt in a full batch);
4. Using two egg whites for every egg;
5. and adding raisins (2 cups for a full batch) -- might also try using applesauce instead of yogurt if I try the recipe with raisins again.
Pretty good stuff, but doesn't taste a thing like peanutbutter bars!
