Recipe(tried): Berry Pie for the Fair

Berry Pie
Here is the recipe I used for pies for the fair.

4-6 Cups Berries
1 Cup Sugar
Lemon Juice to taste

In a small cup combine until the consistency of milk:
1/4 Cup cornstarch
1/4 Cup Cold water (approx)

Pour the cornstarch slowly into the boiling berry filling, stirring constantly. Bring to boil again and cook until thick, about 2 minutes after it begins to boil Let filling cool while you prepare the pie dough.Pour into an unbaked pie crust, wet the edges with an egg wash, cover with another layer of crust and seal edges. Brush the top with the rest of the egg wash and sprinkly wtih sugar. Bake on the lower rack of oven at 425* for 15 minutes, then lower the temperature to 375* for 35-40 minutes longer.

Note: I used frozen berries from last year. I frozen 2 cups with 1/3 cup sugar. When I made the pie I added I drained the thawed berries. I used the juice and added the correct amount of sugar. I thickened the juice. I added 2 tsp. of tapioca to be sure. Then I added the whole blackberries and put the filling into the crusts to bake. They turned out wonderful!
