Recipe: Bill Clinton's Tuna Salad Sandwiches (using hard boiled eggs, serves 2)
SandwichesBILL CLINTON'S TUNA SALAD SANDWICHES
1 (6 1/2 oz) can tuna, drained
1 hard boiled egg, chopped
1 tsp finely chopped onion
1 tbsp finely chopped celery
1 tbsp mayonnaise
1 tsp pickle relish
1 tsp prepared yellow mustard
1 tsp Dijon mustard
1/2 tsp salt (to taste)
FOR THE SERVING:
4 slices whole wheat bread
1 tomato, sliced
2 lettuce leaves
In a medium bowl place tuna, egg, onion, celery, mayonnaise, relish, mustards, and salt. With a fork, combine all ingredients well.
Spread tuna mixture on 2 bread slices, cover with tomato slices and lettuce and top with remaining bread slices.
Makes 2 servings
