Recipe(tried): Black Bean Soup

Black bean soup

1 tbl veg oil
1 medium onion
3 cloves garlic, minced
2 carrots, chopped
2 tsp.. chili powder
1 tsp. ground cumin
1/2 tsp oregano(optional)
4 cups veg. stock
2 cans black beans, rinsed and drained
1 7 oz. can corn, drained
1/4 tsp. ground black pepper
1 can stewed tomatoes(approx.. 10 oz.)


In a large saucepan, heat oil over medium heat. Cook onion, garlic,
and carrot, stirring occasionally for 5 minutes or until onion softened.
Add chili powder and cumin and oregano(if desired), cook for one minute
stirring constantly. Add stock, 1 can beans, corn and pepper. Bring to
a boil.

Meanwhile, in food processor, puree together tomatoes and remaining can
of beans. Add to pot, reduce heat. Cover and simmer for 10-15 minutes
or until carrots tender.
