Recipe: Alaska Halibut Chowder (creamy, using cheese)

2 pounds halibut, thawed if necessary
1/2 cup finely chopped onion
1/2 cup finely chopped green bell peppers
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
6 tablespoons butter or margarine, divided use
3 cups chicken broth
3/4 teaspoon salt
1/2 teaspoon ground white pepper
2 cups milk
3 tablespoons flour
2 1/2 cups shredded sharp cheddar cheese
1 tablespoon minced fresh parsley
Remove skin and bones from halibut; cut into bite-sized pieces; set aside.
Saute vegetables in 3 tbsp. butter.
Add halibut, chicken broth, salt and pepper to the vegetables. Simmer covered, 5 minutes.
Add milk and heat gently.
Combine remaining 3 tbsp. butter with flour and add to chowder. Cook and stir until slightly thickened.
Add cheese; cook and stir over low heat until cheese melts. Sprinkle with parsley.
Makes 6 to 8 servings
