BLUEBERRY MUFFINS (USING FRESH BERRIES)
2 Cups flour (I use all purpose)
1 Cup plus l tablespoon sugar
2 teas. baking powder
1/4 teas. cinnamon
1/2 cup milk
1/2 cup vegetable oil
2 eggs
1 teas. vanilla
2 cups fresh blueberries (FROZEN CAN BE USED)
Sift together or stir..flour, sugar, baking powder and cinnamon. In seperate bowl..beat eggs. add milk, oil and vanilla. Combine your dry ingredients with your wet ones..Fold in your blueberries. Fill sprayed muffin tins 2/3 full. From your 1 tablespoon sugar..sprinkle over uncooked muffins..Bake at 400 degrees for l5 to l8 minutes.
MAKES ABOUT 18 MUFFINS..GOOD HOT OR COLD.
