Recipe: Summer Squash Bake (using frozen yellow squash, cheese and saltine crackers)

3 tablespoons unsalted butter
1 medium yellow onion, chopped
1 tablespoon minced garlic
1 (16 ounce) bag chopped frozen yellow crookneck squash, thawed
3⁄4 cup light sour cream
1 teaspoon sugar
1 cup grated cheddar cheese, divided use
1 cup Nabisco saltine crackers (about 28 crackers), crushed
Kosher salt and pepper
Preheat oven to 350 degrees F. Spray an 8 8-inch baking dish with cooking spray; set aside.
In a medium skillet, over medium-high heat, melt butter. Add onions and garlic; cook and stir for 7 minutes or until golden brown. Reduce heat; add squash and cook and stir for 2 more minutes or until squash is tender.
Stir in the sour cream, sugar, 3⁄4 cup cheese, and crackers. Season with salt and pepper. Pour into the prepared baking dish; sprinkle with the remaining 1⁄4 cup cheese.
Bake for 20 minutes or until the cheese is melted and the top is light golden brown.
Makes 4 servings
