Blueberry-Oat Bran Muffins (low fat)
alt.food.low-fat/Nichola Collins/1995
Makes 12 muffins
These are favorites of ours for snacking. I have never found the need for butter with these in particular, and I am fond of butter.
1 1/4 cups flour
1 1/8 cups uncooked oat bran
1/4 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg (or 2 egg whites)
3 tablespoons oil (or 3 tablespoons applesauce)
1 cup skim milk
1 cup blueberries
Heat oven to 425 degrees F. Spray 12 muffin cups with PAM (cooking spray).
In a large bowl combine the first five ingredients. In a small bowl stir the egg, oil, and milk together until thoroughly mixed. Stir liquid into dry ingredients until just moistened. Fold in blueberries. Glob into prepared muffin pan(s).
Bake 25 minutes until light golden brown.
