Recipe(tried): Carnitas

Here's a recipe that I got off the radio in 1987.
Carnitas
5 pounds pork shoulder
Water
2 teaspoons salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon oregano leaves
2 onions, chopped
2 carrots, chopped
Cover pork with water just to cover. Add remaining ingredients. Bring to a boil. Cover and reduce heat and simmer 2 hours until very tender. Remove from stock (stock can be reserved for other uses.) Put pork in a shallow pan. Bake, uncovered, at 350 for about 45 to 60 minutes or until browned. Can shred meat or cut into chunks.
