SHISH KABOBS WITH TOMATO-HOISIN SAUCE
2 large red bell peppers, cut into 1-inch pieces
1 (1 lb) pkg. mushrooms
1 lb. chicken breast, parboiled, cut into 1-inch cubes
2 large zucchini, cut into 1-inch slices
1 lb. top sirloin, cut into 1-inch cubes
12 cherry tomatoes
12 bamboo skewers, soaked in water
Tomato-Hoisin Sauce (recipe follows)
Preheat grill to high heat.
Thread 1 piece each: red pepper, mushroom, chicken, zucchini, beef, tomato, chicken, and red pepper.
Place kabobs on grill and cook 10 minutes, turn after 5 minutes or until vegetables are crisp tender.
Brush with Hoisin sauce or use as a dipping sauce.
TOMATO-HOISIN SAUCE
6 plum tomatoes, coarsely diced
1/2 medium red onion, finely diced
1/4 cup ketchup
6 Tbsp hoisin sauce
2 Tbsp rice wine vinegar
2 Tbsp soy sauce
2 Tbsp butter, melted
2 Tbsp Dijon mustard
2 Tbsp brown sugar
1 Tbsp honey
1 Tbsp Worcestershire sauce
2 garlic cloves, minced
2 tsp. chili powder
1 tsp. cayenne pepper
salt and pepper (to taste)
Combine all ingredients and mix well.
