Recipe(tried): Carolyn's Famous Meatball Casserole!

Well, ok, it's not so famous, but it is pretty darn good comfort food. I doubled this recipe, and shared it with friends last night, along with egg noodles tossed with olive oil and chopped fresh parsley from my garden, sliced cucumbers in vinegar, and Pat's Better than Sex cake for dessert. My friend's brought a bottle of wine, and we had a marvelous time.

Hope everyone is healing. We are trying to understand and forgive, but it is hard.

Carolyn's not-yet-famous meatballs

1 lb. extra lean ground beef
1/3 lb. ground pork
1 package onion soup mix
1 egg
1 cup of cooked rice

Mix all of the above together, form into balls and place into a 9 X 13 glass baking pan, in a single layer.

Dice:

1/2 each of a red pepper, green pepper, and a yellow pepper.
Add 14 oz. tinned tomatoes (yesterday I used Italian diced, stewed tomatoes, and it was very nice, but regular diced will do, too), and 1/2 tin of tomato soup (Campbell's).
Pour all over top of the meatballs, and cover with aluminum foil.

Bake at 325F for 1 1/4 hours

Serve over egg noodles.
