CELESTIAL CARROT SALAD
1/2 pound Carrots, grated (about 2 cups)
1 tablespoon fresh lemon juice
1/8 teaspoon salt
1/4 cup miniature marshmallows
1 (8 1/2 ounce) can pineapple tidbits or mandarin oranges, drained
1 tablespoon honey
1/4 teaspoon ground mace or nutmeg
1/2 cup plain yogurt or dairy sour cream
Combine grated carrots, lemon juice and salt. Add marshmallows and fruit. Blend honey and mace with yogurt. Toss lightly with carrot mixture. Chill well.
Hint: Add 1/4 cup shredded coconut to carrot mixture before adding dressing.
Makes 4 to 6 servings
