BACKPACK'S SALAD BUNDLESFOR THE DRESSING:
1/3 cup low fat sour cream
1/4 cup salsa
FOR THE BUNDLES:
2 leaves romaine lettuce
1/2 red sweet pepper, cut into thin strips
4-inches of a seedless cucumber, cut into thin strips
1 carrot, cut into thin strips
1/2 cup thin strips of jicama
In a small bowl, combine sour cream and salsa. Divide among 4 small bowls.
Cut romaine leaves in half lengthwise and remove the center rib.
Lay one-fourth of the vegetable strips across the end of 1 lettuce leaf. Roll up and place on a plate, seam side down. Repeat with remaining vegetables.
Serve each with a small bowl of the dressing.
Note: To transport, store in an ice-packed cooler.
Makes 4 servings
