Recipe: Cherry Macadamia Nut Pancakes (using buttermilk) for TIM

CHERRY MACADAMIA NUT PANCAKES
Servings: 4

1 cup sundried cherries
1 cup warm water
1/3 cup macadamia nuts; coarsely chopped
3 cups flour
6 tbsp sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 eggs
3 cups buttermilk
4 tbsp butter, melted
1 1/2 cups whipped cream

Soak cherries in 1 cup water 10 minutes; drain; set aside. Measure the chopped nuts into a small bowl; set aside.

Sift flour, sugar, baking powder, baking soda, and salt, into a bowl.

Beat eggs, buttermilk and butter in a second bowl. Mix together wet and dry ingredients, and stir until slightly lumpy.

Heat and oil a griddle or large skillet. For each pancake pour 1/4 cup batter on griddle. Cook over medium heat until lightly browned on first side. Before turning over, top each pancake with a sprinkle of cherries and nuts. Turn and cook on second side.
