Don't use banana peppers! You actually want to use Chile Gueritos or aka Chile Gueros (meaning blonde in Spanish), they are a very pale yellow, they are best when charred and peeled for a smokey flavor, or you can just boil them until tender and then puree them. They are mild in flavor, but intense in the heat, especially if you leave all the seeds and ribs intact. Banana peppers are on the tangier side and you will get enough tang from the tomatillos - plus the real star of this sauce should be the avocados, you don't want to deter from the creamy, smooth flavor of the avocado.
