Recipe(tried): Chicken Nachos - What I am having tonight...

It has been another hot one today here. I am having a quick and easy but spicy dish that I fix when my husband is craving Mexican food....Chicken Nachos.

Chicken Nachos

1-2 lb. chicken tenders
1 jar picante sauce(your choice of how hot you want it)
1 pkg. Tortilla chips
2 med. boxes of Mexican Velveeta
1 pkg. shredded Mexican blend cheeses
1 container sour cream
1 jar Jalepeno peppers

In skillet, cook chicken tenders. Chop up in skillet, when tender enough to do so. Pour Picante sauce over tenders and heat. Take off stove, and set aside. You may fry tortilla chips or heat in plate in microwave. Lay chips in plate. Pour melted cheese over nachos. Place a serving of chicken tender mixture over melted cheese. Now cover with a layer of shredded cheese, sour cream and then a handful of peppers(only if you want it extra hot)...now you are ready to dig in! Serve with lots of iced tea or favorite beverage! Refried beans would be good on the side.
