CHICKEN TATER BARBECUE

1/2 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped celery
1/3 cup salad oil
1/2 cup catsup
1/4 cup water
2 tbsp. vinegar
2 tbsp. sugar (Mary crossed this ingredient off)
1 tbsp. Worcestershire sauce
1 tbsp. prepared mustard
2 tsp. salt (Mary crossed this ingredient off)
1/4 tsp. ground black pepper
1 (3 lb.) frying chicken, cut in quarters
4 small Idaho potatoes
Saute onion, green pepper and celery in oil until tender but not browned.
Add catsup, 1/4 cup water, vinegar, sugar, and seasonings to the pan and simmer 15 minutes.
Arrange chicken and potatoes in shallow baking pan; pour barbecue sauce over them.
Bake, basting frequently, in hot oven (400 degrees F) for 49-50 minutes or until done.
Serve chicken and potatoes with the sauce.
Makes 4 servings
