Recipe: Simple Beef and Brew Chili (using ground beef, black beans and beer)

SIMPLE BEEF AND BREW CHILI



1 pound ground beef (96% lean)
1 medium green or red bell pepper, chopped
1 (15 ounce) can reduced-sodium or regular black beans, rinsed, drained
1 (14 1/2 ounce) can diced tomatoes with green chilies
1 (12 ounce) bottle light beer (or 1 1/2 cups reduced-sodium beef broth)
1 (1 1/4 ounce) packet reduced-sodium or regular chili seasoning mix

TOPPINGS (optional):
Sliced cherry tomatoes
Sliced green onions or chopped onion
Sliced Serrano or jalapeno peppers
Lime wedges
Tortilla chips

Heat large nonstick skillet over medium heat until hot. Add ground beef and bell pepper; cook 8 to 10 minutes, breaking beef into 3/4-inch crumbles and stirring occasionally.

Stir in beans, tomatoes, beer and chili seasoning. Bring to a boil. Reduce heat; cover and simmer 20 minutes to blend flavors, stirring occasionally.

Serve with toppings, as desired.

Makes 4 servings
