Today I am making Chili Sauce, from the same recipe my Mom used when I was a child. The aroma is so reminiscent of my childhood and brings back so many memories of my Mom.
MOM'S CHILI SAUCE
12 large ripe tomatoes
2 large onions
4 sweet green peppers
2 Tbsp. salt
1/2 cup sugar
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. crushed red pepper
2 1/2 cups cider vinegar
Wash tomatoes, poke with a sharp knife 3 or 4 times, put into boiling water until you can see the skin starting to pull away from the tomato. Immediately remove from boiling water and immerse in ice water. When they are cool enough to handle, remove the skin and the core and chop into a small dice and put into a non-reactive pan.
Peel onions and wash and seed the peppers, chop both of these to a fine chop (I use the food processor for this step)
Stir all together in pan and add salt, sugar, cinnamon, cloves, crushed red pepper and vinegar.
Cook slowly, uncovered 2-3 hours or until thick, stirring ocassionally.
Pour into hot jars that have been boiled for 10 minutes. Wipe rims of jars with a wet paper towel, put on the seal and ring. Store in the refrigerator.
Makes about 4 pints.
We love this on meatloaf, roast beef, even scrambled eggs.
