Recipe: Chipped Beef Cheese Ball (with sherry)

Hi Linda,

I hope one of these recipes is what you're looking for. I haven't tried either but I'm sure you'll give them a try before the big day so there aren't any surprises! The first has olives, the second relish.

Chipped Beef and Olive Cheese Ball

1 tsp. dried minced onions
1 tsp. dry cooking sherry
1 (8 oz.) pkg. cream cheese
2 tbsp. mayonnaise
1 pkg. smoked chipped beef (3 or 4 oz.)
1/4 cup. chopped olives with pimento

Soak dried onions in sherry. Chop beef into small pieces. Chop olives. Blend all ingredients with mixer. Roll into a ball and refrigerate at least one day before serving to blend flavors. Serve with crackers.

Cheese Ball

1 (8 oz.) pkg. cream cheese
1 (3 oz.) pkg. chopped chipped beef
3/4 cup. pickle relish
2 tbsp. mayonnaise
2 tbsp. onions, soaked in 2 tbsp. sherry or bourbon

Mix all ingredients. Form in a ball and roll in chopped nuts. Refrigerate.
