Breakfast and Brunch
CHOCOLATE WAFFLES

1 cup sifted flour
2 teaspoons baking powder
1/4 cup pecans
2 eggs
1/4 cup sugar
3/4 cup milk
1/8 teaspoon salt
2 tablespoons melted shortening or vegetable oil
1 (1 ounce) square unsweetened chocolate, melted
1/4 teaspoon vanilla
Sift the flour and baking powder into a bowl and add pecans.

Put the eggs and sugar into the blender container. Cover and beat at Hi speed until lemon colored and creamy. Add the milk, salt, shortening, chocolate and vanilla. Run at Hi speed until well blended. Use a rubber spatula to push the ingredients down from the sides of the container whenever necessary.

Pour the chocolate mixture over the flour mixture and stir until smooth.

Bake in a hot waffle iron.

Serve as a dessert with whipped cream, ice cream or hard sauce.
