Christmas Casserole Cookies
Makes 18 cookies

2 eggs
1 cup sugar
1 cup coconut
1 cup coarsely chopped nuts
1 tsp vanilla

Beat eggs, add sugar & beat well. Blend in the rest of the ingredients & turn into ungreased 2 quart casserole. Bake at 350 degrees for 30 minutes. Remove from oven & while still hot, beat with a wooden spoon; cool. Form into small balls & roll in granulated sugar.
