Recipe(tried): Club Soda Pancakes and Waffles for Jena

Breakfast and Brunch

Jena here is the recipe you are loking for. They are light and fluffy and you can cook them, cool and freeze the extra pancakes then pop them in the microwave. I've used this recipe for many years. I also included the recipe for waffles using the club soda...my favorite!Club Soda Pancakes

2 C. Bisquick
1 1/4 C. club soda (or plain seltzer water)
2 large eggs

Beat all ingredients with whisk until blended...don't beat them to death! Cook on hot greased griddle turning only once after bubbles form on top. Freeze leftovers and reheat in microwave on High for 1 to 2 minutes.

Crispiest waffles:2 cups Bisquick, 1 large egg, 1/2 cup oil,and 1/3 cup club soda. Freeze leftovers and toast in toaster while still frozen.
