Recipe: Avocado Egg Cups (cooked in a skillet)
Breakfast and BrunchAVOCADO EGG CUPS
1 avocado
2 eggs
Salt and pepper, to taste
Sriracha or other hot sauce, to taste (optional)
Toast (for serving)
Halve and pit an avocado. Cut a thin slice from the bottom of each half (to stabilize them).
Put the halves into a skillet set over medium-low heat. Crack an egg into the center of each avocado half. Cover the skillet and cook until the egg is as you like it, 2 to 3 minutes.
Season with salt and pepper. Add a splash of Sriracha or other hot sauce, if you wish. Serve with toast.
VARIATION:
Try topping it with scallions, bacon bits, or shredded parmesan, too.
