Recipe(tried): Century Griddle cakes

Hello Jena, Saw your post for a light and fluffy pancake . This one does not include club soda but is one i keep comming back too, infact i like these better then I- Hops pancakes. This recipe is from an old cookbook called the Mennonite Community cookbook. Here is the recipe.

Century Griddle Cakes
2 cups all purpose flour
2 tsp. baking powder
1 tsp. salt
2 Tbls. melted butter
3 Tbls. sugar
2 eggs
1 1/2 cups milk
Measure and sift dry ingredients together.
beat eggs untill light add milk.
Add dry ingredients to milk and eggs.
Beat thoroghly.
Add melted butter
Bake on hot griddle.
makes 8 or more cakes.
