Recipe: Cooked Apple Tapioca (Minute Tapioca box recipe)

COOKED APPLE TAPIOCA

1/3 cup Minute tapioca, uncooked
1 cup light brown sugar
4 cups peeled, cored and sliced tart apples
2 cups water
2 tablespoons lemon juice
2 tablespoons butter
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
Freshly grated nutmeg (optional)
Vanilla ice cream (optional, for serving)

Mix together the tapioca, sugar, sliced apples, water, lemon juice and butter in a large, heavy-bottom saucepan. Add the cinnamon and salt. Let the mixture stand 5 minutes.

Bring the tapioca/apple mixture to a boil, stirring often. Simmer until the apples are tender, about 12 minutes.

Serve warm with a sprinkle of nutmeg and a scoop of ice cream on each serving, if desired.

Makes 8 servings
