Made this for dinner and it was just delicious! I served it with rice cooked in chicken stock and green beans. We splurged and had berry pie for dessert.
CROCK-POT COQ AU VIN
4 large chicken thighs (I used boneless/skinless thighs)
salt and pepper, to taste
2 Tbsp. olive oil
1/2 lb. sliced fresh mushrooms
1 onion, sliced
2 cloves garlic, sliced
1/2 cup red wine (substitute chicken stock if desired)
1/4 tsp. thyme
1/4 tsp. basil
1/4 tsp. oregano
Heat oil in large skillet.
Season chicken with salt and pepper, brown until golden.
Place chicken in crock pot and add remaining ingredients in order listed.
Cover and cook on low for 8-10 hours or on high for 3-4 hours.
Serve with rice.
**I slightly thickened the juices with cornstarch/water slurry and cooked about 10 minutes longer.
