Recipe: Corn Salad (sweet and sour, no oil)

CORN SALAD

1/3 cup granulated sugar
1 tablespoon cornstarch
1/4 cup finely chopped red onion
1 teaspoon ground turmeric
1/2 teaspoon celery seed
1/3 cup cider vinegar
2 tablespoons water
1 (12 ounce) can whole-kernel corn, drained
1/4 cup finely diced red bell pepper
1/4 cup finely diced green bell pepper
1/4 cup finely diced yellow bell pepper
1/2 cup finely chopped fresh tomatoes, drained
1/4 cup chopped fresh cilantro

In a saucepan, combine sugar, cornstarch, onion, turmeric, celery seed, vinegar, water and corn. Bring to a boil.

Let cool, then stir in bell peppers, tomatoes and cilantro. Serve chilled.

Makes about 3 cups (12 serving, 1/4 cup each)
