Can you believe I've never been on this website and the first posting I see is about this Cottage Meatloaf!!?
Here is the recipe. Enjoy!
COTTAGE MEATLOAF
1 1/2 lbs lean ground beef
1/2 cup tomato ketchup
1/3 cup tomato juice
1/2 tsp each salt and black papper
1/8 tsp red pepper
2 eggs beaten
3/4 cup fresh bread crumbs
1/4 cup finely chopped onion
2 tsp prepared mustard
TOPPING:
1/4 cup tomato ketchup
1/2 tsp prepared mustard
2 tsp brown sugar
fresh herbs for garnish
combine ketchup, tomato juice, salt, balck and red pepper, eggs bread crumbs, onions and mustard. Blend thoroughly.
Add ground beef. mix gently but thoroughly.
Line a 9x5 inch loaf pan with foil, press in beef mixture.
In a separate bowl, combine the topping ingredients, mixing well. Spread topping over meatloaf.
Bake at 400 for 35-40 minutes or until done.
Drain off fat. Rest meatloaf 5 minutes before serving. Garnish with herbs if desired.
