Recipe: Cowboy Caviar Dip (using cream cheese and hard boiled eggs)

COWBOY CAVIAR DIP

1 (15 oz) can black beans, rinsed and drained
1 (4 oz) can ripe olives, chopped and drained
1/4 cup finely chopped onion
1 clove garlic, finely chopped
2 tbsp vegetable oil
2 tbsp lime juice
1/4 tsp salt
1/4 tsp crushed red pepper flakes
1/4 tsp ground cumin
1/8 tsp ground black pepper
FOR SERVING:
1 (8 oz) pkg cream cheese, softened
2 large eggs, hard boiled, peeled and chopped
1 green onion with top, sliced
Tortilla chips

Mix all ingredients together except cream cheese, eggs, and green onion. Cover and refrigerate at least 2 hours.

TO SERVE:
Spread cream cheese on serving plate. Spoon bean mixture evenly over cream cheese. Arrange eggs on bean mixture in ring around the edge of the plate; sprinkle with green onion. Serve with tortilla chips for dipping.

Makes 12 servings
