Recipe: Apple-Jack Quesadillas (using apple, cheese, and pepper jelly)

APPLE-JACK QUESADILLAS4 tsp extra-virgin olive oil
4 (6-inch) whole-wheat flour tortillas
2 tbsp pepper jelly
1 1/3 cups grated Monterey jack cheese (or mozzarella cheese)
1 McIntosh apple, quartered, cored, and sliced thinly
Heat oil in medium frying pan on medium heat.
Spread each tortilla with 1/2 tablespoon jelly; place in pan, jelly-side up, one at a time. Cover half tortilla with 1/3 cup cheese; place one-quarter of apple slices on top. Fold half tortilla over to make half-moon.
Fry about 2 minutes each side until brown and crispy and cheese is melted.
Makes 4 servings
