CRACKED SUGAR COOKIES
"My Louisiana cousin, Mackie Kyle, gave me this recipe, which she says has been around for a long time."
2 1/2 cups sifted all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1 cup (2 sticks) unsalted butter or margarine, softened
1 1/4 cups sugar
3 egg yolks
1 teaspoon vanilla
Preheat oven to moderate (350 degrees F). Grease cookie sheets.
Sift together flour, baking soda and cream of tartar onto wax paper. Set the mixture aside.
Beat together butter and sugar in large bowl with electric mixer until fluffy, about 3 minutes. Beat in egg yolks and vanilla. Gradually add flour mixture in 4 parts, beating well after each addition, until well blended.
Shape dough into balls, using 1 level measuring tablespoonful for each ball. Place balls 2 inches apart on prepared cookie sheets; do not flatten.
Bake in preheated moderate oven (350 degrees F) for 12 minutes or until lightly golden around edges. Remove cookies to wire racks to cool.
Makes 3 1/2 dozen cookies
