This is an easy recipe for a great creamy sauce.
Cook 1-1/2 cup elbow macaroni, drain
In saucepan melt 3 tbsp. butter, blend in 2 tbsp. flour and make rue.
Add dash of pepper or dash of hot sauce.
Add 2 cups milk, or for richer version use 1 cup half and half and 1 cup milk.
Cook and stir until sauce has thickened.
Add 1/4 cup finely chopped onion
Add 8 oz. sharp cheese, cubed
Add 8 oz. Cooper sharp cheese, or another sharp processed cheese, cubed
Stir until cheese is melted. Mix in elbows and put into greased casserole. Bake 350 degrees 35-40 minutes.
