RESTAURANT AUGUST WARM STRAWBERRY COBBLER
WITH VANILLA ICE CREAM
4 tablespoons unsalted butter, diced, divided use
2 pints fresh strawberries
1/4 cup sugar
2 whole eggs
Zest of 1 lemon
1 teaspoon vanilla
1/4 cup flour, sifted with 2 teaspoons baking powder
6 tablespoons heavy (whipping) cream
4 tablespoons powdered sugar
4 sprigs fresh mint, chiffonade
Vanilla ice cream (optional, for serving)
Preheat oven to 400 degrees F.
Liberally butter a 2-quart earthenware dish. Add a layer of berries.
In a mixing bowl, cream together remaining butter sugar, eggs, lemon zest, and vanilla. Add flour mixture, and slowly add cream until well combined and without lumps. Pour mixture over berries.
Bake 25 minutes. Remove from oven and dust with powdered sugar and chiffonade of fresh mint.
Can be served hot or cold, with or without ice cream.
VARIATION:
You may substitute any type of seasonal berries or fruit.
