Recipe: Easy Bisquick Lasagna Squares (using cottage cheese, no noodles, 1980's)

EASY BISQUICK LASAGNA SQUARES



FOR THE CHEESE LAYER:
1/2 cup creamed cottage cheese (small curd)
1/4 cup grated Parmesan cheese
FOR THE BEEF LAYER:
1 lb. ground beef, cooked and drained
1 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1 (6 ounce) can tomato paste
2 cups shredded mozzarella cheese, divided use
FOR THE BATTER:
1 cup milk
2 eggs
2/3 cup Bisquick baking mix
1 teaspoon salt
1/4 teaspoon ground black pepper

Grease a square baking dish, 8x8x2-inch. Layer cottage cheese and Parmesan cheese in dish; set aside.

Mix together beef, herbs, tomato paste and 1/2 cup mozzarella cheese; spoon evenly over top. Set aside.

Beat milk, eggs, (dry) Bisquick, salt and pepper with wire whisk until smooth, 1 minute. Pour over beef mixture in dish.

Bake until knife inserted in center comes out clean, 30-35 minutes. Sprinkle with remaining 1 1/2 cups mozzarella. Cool 5 minutes before serving.

Makes 4-6 servings
