1 lb. diced ham
1 onion, chopped
2 c. corn
3 tomatoes, peeled & diced
2 potatoes, peeled & diced
1 tbsp. soy sauce
1 tsp. sugar
1 tsp. salt
1 tsp. Tabasco pepper sauce (or to taste)
Water or broth to cover
Place ingredients in slow cooker. Cover and cook 8 to 10 hours. Stir occasionally. Add water if necessary.
Serves 6-8.

2 pk Caramels, 14oz each
1/4 c Water
8 md Apples
In crockpot, combine caramels and water. Cover and cook on high for 1 to 1 1/2 hours, stirring frequently. Wash and dry apples. Insert stick into stem end of each apple. Turn control on low. Dip apple into hot caramel and turn to coat entire surface. Holding apple above pot, scrape off excess accumulation of caramel from bottom apple. Place on greased wax paper to cool.

1 1/2 c Orange juice
6 ts Bags
1 1/2 c Pineapple juice
1/3 c Sugar
1 Orange sliced (unpeeled)
2 tb Honey
Warm your crock-pot first with some hot tap water. Then pour boiling water over the tea bags in the >> crock-pot. Cover and let stand 5 minutes. Remove the tea bags. Stir in the sugar, honey, orange juice, pineapple juice, and orange slices. Cover and heat on low for 2-3 hours; serve from pot.

CROCK-POT: 4 Rock Cornish hens (about 16 oz. each), 1/4 c. flour, 2 tsp. salt, pepper, 1/4 tsp. chili powder, 2 small sliced onions, 2 c. cubed peeled eggplant, 1 green pepper seeded & cut 1/2" strips, 4 oz. sliced mushrooms, 1 (2oz.) jar chopped pimiento, 1 clove chopped garlic, 1 Tbsp. olive oil, 1 bay leaf, 1/2 tsp. thyme, 1 tsp. basil, 1 tsp. salt, 1/2 tsp. pepper, 3/4 c. dry white wine or chicken broth. Rinse hens & pat dry. Mix flour, 2 tsp. salt, 1/2 tsp. pepper & chili powder. Coat hens with flour mixture. Combine onions, eggplant, green pepper, mushrooms, pimiento, garlic & oil in pot. Arrange hens on top & sprinkle w/remaining seasonings. Pour wine over hens. Cover & cook Low 8-10 hrs. Prior to serving taste & reseason. Serves 4-8.
CROCKPOT CORNISH HENS W/LIME GLAZE: 2 Cornish game hens, 2 slices cubed cinnamon bread, 1 stalk chopped celery, 1/2 tsp. dried tarragon, 2 Tbsp. chopped walnuts, 1 chopped green onion, 1/3 cup vermouth or white wine, 3 Tbsp. melted margarine or butter, 2 Tbsp. sugar, 2 Tbsp. fresh lime juice, 1 Tbsp. soy sauce, 3 Tbsp. cornstarch, 3 Tbsp. water. Thaw hens if frozen. In a bowl, combine bread cubes, celery, tarragon, walnuts and green onion. Sprinkle with vermouth or white wine and toss. Spoon mixture into cavity of each hen. In a bowl, mix together margarine or butter, sugar, lime juice and soy sauce. Brush hens with sauce. Place a rack or trivet in a slow cooker. Place hens on end, neck down, on rack. Cover and cook on low 6 to 7 hours or until hens are tender Remove hens and cover to keep warm. Turn control to high. In a small bowl, dissolve cornstarch in water; stir into cooking juices. Cover and cook on high 10 minutes or until thickened. With shears, cut hens in half. Spoon sauce over each. Makes 4 servings. Can be baked laying down on a rack for 6-1/2 hours; sauce can be cooked in a pan on the stove. Not too sweet, not too tart.

In small saucepan, combine jelly, cherries, remaining butter, lemon juice, salt & allspice. Cook over low heat, stirring till jelly is melted. Reserve 2/3 cup sauce. Brush remaining sauce on hens in cooker. Cover & cook on low 6-7 hours. Spoon reserved sauce over hens at serving time.

Butter
Line crock pot with aluminum foil, leaving enough to overlap potatoes when finished. Layer half each of the bacon, onions, potatoes and cheese in crock pot. Season to taste and dot with butter. Repeat layers of bacon, onions, potatoes and cheese. Dot with butter. Overlap with remaining foil. Cover and cook on low setting for 10 to 12 hours.

3 pounds chicken -- cut up
1 medium onion -- chopped
4 medium potatoes -- in 1" pieces
1 large green pepper -- in strips
1/4 cup chopped parsley

1 teaspoon salt
1 dash pepper
1/2 teaspoon dried basil
1 pound jar spaghetti sauce
Combine chicken, onion, potatoes, green pepper, parsley, garlic, salt, pepper, basil and spaghetti sauce in crock pot. Cook on Low for 6-8 hours or on High for 3-4 hours. Skim fat off top and serve in bowls. Can omit potatoes and serve over spaghetti.

Nacho Dip
1 pound lean ground beef
1 pound Velveeta process cheese
1 (10.75 oz) can cream of mushroom soup
1 soup can milk
1 package nacho tortilla chips
Brown and crumble ground beef and set aside. Cube cheese. Mix cheese with soup and one soup can of milk in a crock pot. Add ground beef. Let cook for 1 to 2 hours until cheese is completely melted. Serve with chips as a dip or serve over tacos.

Low Fat Glazed Chicken

Serving Size : 6
6 ounces orange juice, frozen concentrate thaw
3 chicken breast -- split
1/2 teaspoon marjoram
1 dash ground nutmeg
1 dash garlic powder
1/4 cup water
2 tablespoons cornstarch
garlic -- optional
Combine thawed orange juice concentrate (not regular orange juice) in bowl along with the marjoram, garlic powder and nutmeg. Split the chicken breasts to make 6 serving sizes. Dip each piece into the orange juice to coat completely. Place in crock pot.
Serving Ideas : Serve with brown or white rice.
NOTES : Takes less than 10 minutes to prepare this in the mornings and have it ready when you come home. For an even healthier variation, use boneless skinless chicken breasts.

OLD WORLD SAUERKRAUT SUPPER
3 strips bacon, in small pieces
2 lb polish sausage, in pieces
1 1/2 ts flour
2 (27-ounce) cans sauerkraut
2 small potatoes, cubed
2 small apples, cored, cubed
3 ts brown sugar
1 1/2 ts caraway seeds
1/2 c water
Fry bacon and Polish sausage until crisp; drain. Add flour to drippings and blend well. Stir in sauerkraut; mix well. Place sauerkraut mixture, bacon and sausage pieces in crock pot. Add all other ingredients; stir together thoroughly. Cover and cook on Low 7 to 9 hours (High: 3 to 4 hours).

1 Chicken, cut up, OR 4 Boneless chicken breasts - cut up
1 can Cream of mushroom soup
1 can Cream of chicken soup
1 lg Onion; sliced
1 can French onion soup
Garlic, fresh or powder; to taste
1 pk Fresh mushrooms; sliced
Poultry seasoning; to taste (optional)
Add all ingredients to crock pot, cover and simmer on LOW for at least 5 to
6 hours, but can cook all day if that's easier for your schedule. You can
also add any veggies you like. Just serve over rice, potatoes cooked any
way you like, noodles, biscuits, or over popovers is great. Can be frozen
and reheated. You can double or triple recipe if you need to and then
freeze in dinner size portions too. This can also be cooked on the stove.
Just cook everything in a large Dutch oven for about 1 hour.

1 cup beef stock (or more)
2 med. onions, peeled & diced

1 can Rotel (mild or hot)
Tabasco sauce to taste
1 jar thick salsa
cut rump roast into 4 equal pieces. place roast and
next 4 ingredients into crockpot. sprinkle 1T chili
powder(or more) over top of meat. pour 1 can Rotel
over top and add Tabasco if using.
cook in crockpot low heat 9 to 10 hours.
remove meat from crockpot-drain. shred meat using
two forks. place back in crockpot & pour salsa over
top & heat on low temp for at least 15 minutes. (if not
using meat right away shred & store in meat juices;
drain & then pro

2 tbls. Worcestershire sauce
1 tbls. Brown Sugar

1/2 tsp. dry mustard
1 1/2 cups Water
Melt shortening, add beef, onions, until beef is brown and onions cooked.
Put in crock pot with Catsup, Worcestershire sauce, sugar, salt, Paprika, &
dry mustard & water. simmer for 2 to 2 1/2 hrs.
then thicken with:
2 TBLS. Flour
1/4 Cup Water
SERVE OVER :
3 cups egg noodles

1 Can Campbell's Cream Of Mushroom Soup
1 Can Campbell's French Onion Soup
Salt & Pepper Roast and place in crock pot
Empty both cans of soup over roast (I mix them together first)
Cook slowly for 6-8 hrs depending on size of roast
When done, just pull roast apart and serve..
( I have to strain the soup gravy because of the onions & my family who
won't eat them.. I also thicken it some if to thin..) I make potatoes and a
veg and all done.easy, easy..Love it and tasty..Enjoy...
