Recipe: Crockpot Pork Chops (Rival, 1974) and Italian Pork Chops (crock pot)
Main Dishes - Pork, HamThis is the only recipe for Pork Chops I could find in my 1974 Rival Crock Pot booklet (Models #3100, 3101, 3102, 3300) and the one I found in an unrelated booklet is named Italian Pork Chops. So, in a pinch, and if no other recipes are submitted, you may be able to use only the ingredients remembered and follow the Rival instructions.
PORK CHOP CASSEROLE

6 to 8 pork chops
Salt and pepper
2 medium sweet potatoes* peeled and sliced
1 large onion, sliced
1 large green pepper, sliced
1/2 teaspoon leaf oregano (dried)
1/4 teaspoon whole thyme (dried)
1 (16-ounce can) tomatoes
Trim visible fat from pork chops, season with salt and pepper, and brown in skillet to remove excess fat.
Add remaining ingredients to Crock Pot in order listed. Drain pork chops and place in Crock Pot.
Cover and cook on LOW 8 to 10 hours. (High: 3 to 4 hours). Adjust seasonings to taste before serving.
*White potatoes may be substituted for sweet potatoes, if desired.
ITALIAN PORK CHOPS

2 cans French-style green beans
2 8-ounce cans tomato sauce
1/2 cup chopped green pepper
1 large garlic clove, chopped
1 medium onion, chopped
Water
Brown pork chops. Place with all other ingredients in slow crock pot with just enough water to barely cover pork chops.
Cover and cook until tender and well done.
