Recipe(tried): Crockpot Soup (with variations)

CROCKPOT SOUP (WITH VARIATIONS)

1 can pork and beans
1 can kidney beans, or pinto beans
1 can whole kernel corn
2 cans crushed tomatoes
1 bell pepper, sliced
1 onion, quartered and sliced
1 pkg chili seasoning
1 can chicken broth
2 bay leaves
3 boneless skinless chicken breasts (optional)

Combine all ingredients in a large crockpot. Allow to cook all day on low.

Before serving remove chicken breasts and bay leaves. Discard bay leaves. Shred chicken breasts and return to pot. Stir and serve.

I also sometimes use a bag of frozen onion and bell pepper slices in place of the fresh ones.

VARIATIONS:

For a vegtable soup, omit chicken breasts.

For beef soup, omit can of chicken broth. Add 1 can beef broth and 1/2 - 1 pound browned ground beef.
