Recipe(tried): Curried Eggplant

Curried Eggplant

1 1/2 lbs. pork or beef tips (cut in small pieces)
several pieces of salted or smoked porked
1 large eggplant
1 large tomato
1 large onion
2 cloves garlic
2 scallions
3 sprigs Italian parsley
1 tsp. salt black pepper
2 Tbs. butter
5 Tbs. oil
2 Tbs. sugar
2 1/2 Tbs. curry powder

Combine all meats and seasonings together, except 3 tablespoons of the oil, sugar and curry powder.

Put on stove to heat a large, heavy pot and allow to get extremely hot, then add half of the oil and heat until almost smoking. Add sugar, forming a caramel. Quickly add meat mixture, letting it brown, then add water to cover and bring to a boil. Cook until meat is half done; take peeled and diced eggplant and add to pot with remaining oil and sugar. Cook approximately 20-30 minutes, or until done and then add butter during last 5 minutes. Delicious!
