Recipe: Artichoke Quiche

Breakfast and Brunch
ARTICHOKE QUICHE

1 unbaked pie crust
1 package frozen artichoke hearts (or 1 can plain artichoke hearts, NOT marinated)
1/2 pound Swiss cheese, sliced
1 cup half & half
2 eggs
1/2 tablespoon flour
1/4 teaspoon crushed tarragon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 tablespoons melted butter

Layer artichoke hearts (break apart) and cheese slices in raw pie crust. There will be 4 layers - with hearts on bottom, next cheese, then hearts and finishing on top with cheese.

Beat remaining ingredients together and pour over top.

Bake at 375 degrees F for 40 minutes until top is browned. Let set for several minutes before cutting.
