Recipe(tried): Eggplant Parmigiana

Our family favorite Eggplant dish is Eggplant Parmigiana. I do not have any measurements for this as we just simply put it together.

Eggplant Parmigiana

Peel as much Eggplant as needed, and slice (round) slices about 1 inch thick. Beat slightly (as many eggs as needed) with milk, salt,pepper,garlic powder, grated parm. or romano cheese and parsley to taste. Dip each piece of Eggplant in egg mixture and bread with Italian Seasoning Bread Crumb. Make sure Eggplant is well coated. In a large frying pan cover bottom with a generous amount of olive oil and fry Eggplant slices until nicely browned. Drain on paper towel to remove excess oil

Cover bottom of a baking dish with Spaghetti Sauce (I use my homemade sauce) and then one layer of fried Eggplant. Top with thinly sliced Mozzarella Cheese (enough to cover Eggplant) and top with additional Spaghetti Sauce. Repeat layers ending with sauce on top. Bake about 30 minutes at 350 degrees or until hot and cheese is melted. (Baking time will depend on amount being cooked).
