I SLICE THE EGGPLANT LENGTHWISE IN 1/4 INCH SLICES, SAUTE IN A SMALL AMOUNT OF OIL, AND USE THEM IN LASAGNE INSTEAD OF NOODLES.

I ALSO FRY THEM THE LOWFAT WAY, PEEL AND SLICE IN 1/4 TO 1/2 INCH ROUNDS, SPRINKLE WITH SALT AND LET DRAIN FOR 30 MINUTES TO AN HOUR, RINSE, DIP IN MILK, SEASONED BREAD CRUMBS AND PLACE ON A PAM SPRAYED BAKING SHEET, BAKE AT 350 DEGREES FOR ABOUT 15 TO 20 MINUTES OR UNTIL SOFT . SERVE IMMEDIATELY.
