DINAH SHORE'S LUSCIOUS ROAST CHICKEN
1 (4 to 5 pound) roasting chicken
salt and pepper (to taste)
3 ribs celery including leaves
1 green bell pepper, cut in chunks
3 scallions, cut large pieces
1 medium onion, cut in chunks
4 fresh basil leaves
3 whole sprigs parsley
1 additional green bell pepper, cut in wedges
1 red bell pepper, cut in wedges
3 medium potatoes, cut in large wedges
2 tomatoes, cut in large wedges
1 carrot, sliced
1 zucchini, sliced
4 additional parsley sprigs, chopped
2 tablespoons butter, softened
juice from 1 lemon
Preheat the oven to 400 degrees F.
Season cavity of chicken with salt and pepper. Stuff it with celery, green pepper chunks, scallions, onion, basil, and whole parsley sprigs.
Place in a large roasting pan and surround it with the cut up vegetables and chopped parsley. Rub chicken with butter; sprinkle with salt and pepper and squeeze lemon juice over all.
Cover and bake for 30 minutes. Uncover and cook another 1 to 1 1/2 hours or until done, depending on the size of the chicken.
Makes 6 servings
