Recipe(tried): Ruby River Jacketed Baked Potatoes (copycat recipe)

RUBY RIVER JACKETED BAKED POTATOES
(copycat recipe)

2 baked potatoes
2 cups pancake mix (krusteaz)
2 cups water
salt and pepper
4-6 cups oil for frying
FOR SERVING:
Butter
Sour cream
Shredded cheddar cheese
Crumbled bacon.

Bake potatoes, and cool to the touch.

Combine (dry) pancake mix and 2 cups water gently, just until combined. Season to taste.

Heat a deep pot of oil to 350 degrees F.

Dip the cooked potatoes in the batter, coating well. Slowly lower into the hot oil. Cook for a couple of minutes per side until potatoes are golden. After cooking a couple of potatoes, Let the oil heat back up before adding more potatoes.

Cut potatoes down center and fluff. Serve with a big helping of butter, sour cream, a sprinkling of cheddar cheese and crumbled bacon. Serve immediately while piping hot.
