Recipe(tried): Easy Chicken Breast Stir-fry
Misc. couple of ppl. asked me for this extremely and easy to find ingrendts chinese dish... well, i think it's mom's creation but i can't be sure about that... it's one of those easy dishes we often enjoy at home.
Easy chicken breast stir-fry
3-4 skinned chicken breast, cut into cubes
then rub these ingredients into chicken:
about 1/2 T. sugar
about 1 T. oyster sauce
about 1 T. chinese light (color) sesame oil
about 1/2 T. soy sauce
rub in about 2 T. cornstarch
finely chop 3 spring onion (green onion), about 2 inch of fresh ginger and 4 cloves of garlic
heat the frying pan or wok.
add enough oil for shallow frying.
when hot, add in the chicken cubes. stir to coat until the chicken is lightly browned but not 100% cooked.
drain the oil and reserve the chicken on a plate.
leave only a thin film of oil in the wok.
add in the chopped aromatics. add in about 1 T. of yellow bean paste or black bean paste. (If you can't find either, you can omit it all together. but the flavor will be reduced much...)
stir the aromatic until fragrant but not burnt.
add in the chicken cubes and stir to mix well. add in another T. of oyster sauce.
add in some chicken (homemade, no salt version preferred) if the chicken threaten to dry up.
dish out and serve with steamed jasmine rice and some lightly poached leafy green. i think even some light chicken broth is also good. easy!
