EASY POTATO GNOCCHI
For every 2 cups of mashed potatoes add one egg, beat well.
Add enough flour to make a soft dough.
Roll out in a long tube shape.
Slice in the length of a finger and the size of a finger (or smaller).
Drop in boiling salt water cook for 3 to 4 minutes.
Serve with beef gravy, sour cream and chives, onions and mushrooms, spaghetti sauce
If you have any noodles left, the following day you can fry in onions and sprinkle with cheddar cheese.
