Recipe: Eier und Schmount (German breakfast dish)
Breakfast and BrunchHi Chris,
I did a little digging and found a similar recipe request from back in 2005 at RecipeZaar. I've included the answer below. I hope that it's what you're looking for. It would be interested to hear from anyone else on this. If this doesn't look like it could be what you remember please let us know and we'll keep looking.
Happy Cooking!
Betsy
Request:
I was raised in a German household and on occasions we had an egg dish called, sp (eier und smalts). literally eggs and wheat.
Answer:
"My DH is from a Mennonite community where they speak low German. I have a recipe here for something called Ruhrei. In the description it is said to also be known as Eier und Schmount. Schmount is another name for fat, or butter, or Schmalz." - Leslie/RecipeZaar
6 tbsp flour
6 eggs
1/2 tsp salt
1/3 cup milk
1 1/2 tbsp butter
Mix flour, eggs and salt. Add milk to make a thin batter. Melt butter in frying pan. Pour in egg mixture and fry over medium heat. Cut and turn constantly with spoon until firm and light brown. Serve hot.
