Recipe: Maple-Bacon Oven Pancake (Bisquick)
Breakfast and BrunchMAPLE-BACON OVEN PANCAKE
"This unique cheese- and bacon-topped pancake bakes in the oven. Cut into squares, it's an easy way to serve pancakes to a crowd."
1 1/2 cups Bisquick baking mix
1 1/2 cups shredded Cheddar or process American cheese (6 ounces), divided use
3/4 cup milk
1/4 cup maple-flavored syrup (plus additional for serving, if desired)
1 tablespoon sugar
2 eggs
12 slices bacon (about 1/2 pound), crisply cooked and crumbled.
Heat oven to 425 degrees F. Grease and flour rectangular baking dish, 13x9x2 inches.
Beat baking mix, 1/2 cup of the cheese, the milk, syrup, sugar and eggs with wire whisk or hand beater until only small lumps remain; pour into dish.
Bake uncovered until wooden pick inserted in center comes out clean, 10 to 15 minutes.
Sprinkle pancake with remaining cheese and the bacon. Bake uncovered until cheese is melted, 3 to 5 minutes longer.
Serve with maple- flavored syrup if desired.
Makes 6 to 8 servings
