Recipe(tried): Luther's BBQ Spicy Cajun Rice / Dirty Rice (quick version)

So I worked for Luther's for 10 years and have been working on a from scratch Cajun Rice recipe. The key to their version was they used their pork rub to make it. (Which by the way is amazing) the closest thing I have found happens to be the Zatarain Dirty Rice you can buy in most stores.
If you follow the basic directions on the box, replace the 1 lb ground beef with 2 lbs smoked brisket finely chopped and 1 lb link sausage. Upper lifter on brisket (fattier part is better) do not add butter like the instructions on the box (you can but it tends to get super greasy).
You can have fun from there. I usually serve with some hot sauce, cheese and chives. Sometimes I cook up some red beans and have this with (red beans and rice) let me know what you think!
