I dry peppers every year and use only the sun. I have an outdoor rack that I surrounded with mesh and lay strips of peppers on them in direct sunlight. Bring them in at night though!!! I have found that with some of the peppers that I tried to hang (not over my woodstove) that they developed mold on the inside with the humidity. I havent had a problem drying the small hot peppers by using a
string but I still hang them in the sun (the sun also kills bacteria).
